Course Description

Application of nutrition principles to the human life cycle: nutrient functions, needs, sources, and alterations during pregnancy; lactation; growth; development; maturation; and aging. A minimum grade of "C" (2.0) or above must be earned in this course before it can be counted in a Human Nutrition major or minor or as a prerequisite for any other nutrition course. (Fall, Spring, Summer [As Needed) [Graded (Standard Letter)] Prerequisite(s): NFS 1020 - Prerequisite Min. Grade: C Registration Restriction(s): None

Learning Outcomes

Course Objectives and Learning Objectives:

A.   Students will learn fundamental nutritional principles as well as gaining factual knowledge, (terminology, classifications, methods, and trends).

B.    Students will learn how to apply course material (to improve thinking, diet, and health). 


1.             Understand the role of nutrition and changes in nutritional requirements that occur during the life cycle in humans.  

2.             Discuss nutrient needs that change during each stage of the life cycle.

3.             Identify major areas of nutritional concern in each stage of the life cycle, including impact of physiological and developmental changes.

4.             Identify nutritional risk factors that may lead to chronic disease through case studies of individuals/families at various stages of the life cycle.

5.             Interpret research literature related to nutrition in the life cycle.

Course Requirements

Grading will be based on the following point breakdown:
Exam #1, 2, and Final 300 (each test is worth 100 pts.)
Lab (infant formula comparison) 45 pts.
Lab (elderly) 45 pts.
Infancy Quiz Assignment (no late work accepted for this assignment) 30 pts.
Other possible assignments 30 pts.
TOTAL 400 – 430 pts.

A > 93, A- > 90
B+ > 87, B > 83, B- > 80
C+ > 77, C > 73, C- > 70
D+ > 67, D > 63, D- > 60
F <60%

1. Exams
There will be three exams during the semester.  Exams will be taken on the dates scheduled in Canvas. All exams will be taken in the testing center. Exams will be multiple choice.

You will not be allowed to take an exam after the scheduled date. IF you cannot take the test on the scheduled date, you will need to make prior arrangements with me. You need to let me know at least a week in advance of the day that you want to take the exam. This will have to be done in email. In that email make sure to put the day you would like to take the exam and what section that you are in. Also, provide a reason why the test needs to be taken earlier. Do not email me more than one week before you need to take the exam. If your request is earlier than I can accommodate you then I may have to give you an older version of the exam. That older exam may not always reflect the material that we are covering. Sometimes I may not be able to accommodate your request.

Sometimes you cannot plan certain things happening which may affect you taking the exam on the scheduled day. For example, emergencies such as being admitted to the hospital, giving birth, etc. If this happens you may need to provide proof of the event and work with the DRC. If you are sick the day of an exam you must contact me as soon as possible and you must have proof from a doctor that you are too sick to attend

2. Assignment: All of your assignments will be described in Canvas. Warning: do not submit your assignments with the Canvas App, Canvas Support told me that it is not always reliable. Late assignments will be penalized. Assignments are to be turned in by the due date if not they are considered late and a 30% reduction will be attached. After three days, late assignments will not be accepted. The assignments are available early so you have plenty of time to work on them ahead of time. All assignments must be typed. Assignments must stay in the same format. There is an explanation in Canvas of this. If an assignment is a minute late it is late so plan accordingly and give yourself plenty of time.

3. Labs: There are 2 labs and everything can be done on Canvas. Labs can be completed at home. The due dates for labs are listed in the calendar section. To find it go to Canvas and look under the syllabus section or modules.

4. Emailing me: I will respond to emails within 48 hours. If received on the weekend I will respond on Monday. Make sure to email me at schmidt@suu.edu not Canvas! If it is an emergency I will try to contact you as fast as possible. Again, please do not contact me through Canvas.

You will be put into a waiting room when you enter. There may be others in front of you, and Zoom does not let you know that, so you just have to be patient. I will get to you when I can.  There will be times that I will have to miss office hours due to other university commitments. This does not happen too often, but I apologize in advance. 

After each exam, you can't look over the older exams, just the one that was taken. For example, when you have taken exam 2, you can no longer look over exam 1. If you want to come in and look over your exam, you will need to email me 24 hours prior so that I can get it ready for you. Thanks.

Attendance Policy

Attendance is not required; however, it is highly recommended. Grade in the class is highly correlated with attendance.

Academic Credit

According to the federal definition of a Carnegie credit hour: A credit hour of work is the equivalent of approximately 60 minutes of class time or independent study work. A minimum of 45 hours of work by each student is required for each unit of credit. Credit is earned only when course requirements are met. One (1) credit hour is equivalent to 15 contact hours of lecture, discussion, testing, evaluation, or seminar, as well as 30 hours of student homework. An equivalent amount of work is expected for laboratory work, internships, practica, studio, and other academic work leading to the awarding of credit hours. Credit granted for individual courses, labs, or studio classes ranges from 0.5 to 15 credit hours per semester.
